Family Picnic

Who doesn't love a meal outdoors with family and friends. Good food, good company, good conversation, with a lot of laughs. This brings me so much joy! When you do it picnic style, it just adds plain old fun! Get outdoors with your peeps, your kids and have fun.

Pack your basket and cooler, get ready to have some fun.

Menu ideas for your next picnic meal.

Grilled Chicken Sandwich

Fruit Kabobs

Chips

Chocolate Chip Cookies

Beverages- Water, Beer/wine or champagne if you are feeling bubbly & sodas for the under 21 crowd


Grilled Chicken Sandwich

6 Boneless/Skinless Chicken Breasts

1/3C Plus 3/4 C Extra Virgin Olive Oil

6 T fresh lemon juice

1 T dried herbs de Provence

2 garlic cloves pressed

2 t anchovy paste (optional)

2 loaf sourdough bread

4 T drained capers

2 large tomatoes thinly sliced

1 small red onion thinly sliced

4 large romaine lettuce leaves

Balsamic Vinegar


Using meat mallet, pound chicken breasts between sheets of plastic wrap (or you can now buy thick sliced chicken breast in the meat dept)

Combine 1/3 c oil, 2 T lemon juice, herbs de provence and 1/2 of garlic into a large Ziploc.

Add chicken to bag, shake and chill for 2-6 hours (overnight is even better)

Heat Grill to medium-high, remove chicken from marinade. Sprinkle with Salt & Pepper

Grill chicken ~4 min per side, until done. Cool and cut on a diagonal into 1/2 inch thick slices

Wisk anchovy, remaining 4 T lemon juice and garlic, gradually wisk in oilve oil. Season to taste with S&P.

Cut Bread loaves in half, Pull out to half of inside. (Give this to the kids to snack on) :)

Drizzle 1/4 c dressing over each bottom half, sprinkle 2 T capers on each, layer chicken, tomatoes and lettuce. Drizzle Balsamic Vinegar over top, Cover and press to compact.

Slice into individual pieces and wrap each in plastic wrap. Refrigerate until you are ready to pack your basket.

Fruit kabobs.

Add any fruit you and your family like to wooden skewers. I love fruit and mint together so I add fresh mint.

*If you want to skip the sandwiches, for a lighter and faster picnic, pack Cheese, cold cuts, olives, nuts & fruit kabobs and put into red solo cups as seen here. Don't forget the pickles :)
